Fresh arugula from the garden in this salad is just as key an ingredient as garden tomatoes. The "shop" format, alas, does not give results that excite taste buds...

Cooking

Step 1

We're getting ready to ship. Drain the oil from the mussels. If it's spicy, great! Mix liquid honey (if it is thick - microwave for 10 seconds), soy sauce, oil and ground pepper. If dressing is not enough, add olive oil by eye.

Step 2

Rinse the arugula, sort and dry well. Put in a salad bowl. Coarsely chop the tomatoes. Cheese cut into cubes. Put tomatoes, cheese, mussels and olives on arugula. Drizzle dressing over salad and top with balsamic sauce.
