The peculiarity and uniqueness of the classic "Turtle" cake is that it does not consist of one whole sponge cake, but of individual cakes laid out in the form of a turtle shell. The sponge cakes are soaked in cream and covered with glaze. The invention of sponge cakes is attributed to English sailors. Such pastries did not spoil for a long time during long sea voyages. Usually, the "Turtle" cake is prepared with sour cream. Kiwi, prunes, and nuts are often added to the recipe.
