Pie with pear and cottage cheese
Anyone who reads the recipe for our pear and cottage cheese pie will undoubtedly be very surprised: this pastry with fruit is completely different from the traditional one. Of course, there is a reason for such a reaction, because there is no sugar in the composition of the dish, but there are cheese, salt and pepper. And such a pie is served with pear and cottage cheese in general with mustard sauce! So what is it?! In front of you is a snack pie, original and very refined. In its composition, one can find a surprisingly harmonious, universally recognized combination of pears with blue cheese, which in our case plays a key role. How to cook Pie with pear and cottage cheese
Step 1
Prepare the base of the pear and cottage cheese pie. To do this, lightly dry the bread crumbs in the oven and let cool. Grate the cheese on a fine grater, mix with soft butter and crumbs. Pepper. Stir and refrigerate for 10-15 minutes.
Step 2
Spread the resulting pie base in an even thin layer on the bottom of a 20 cm springform pan lined with baking paper (lay out in small portions and press against each other). Form small sides and prick the dough with a fork.
Step 3
Heat the oven to 180°C. Bake the pie base for 10-15 minutes. The cheese cake should be well browned. Let it cool in the mold at room temperature.
Step 4
Prepare the filling for the pear and cottage cheese pie. Rub the cottage cheese twice through a fine sieve. In a bowl, beat the eggs with a mixer. Add cottage cheese and beat again.
Step 5
Mash the blue cheese with a fork. Add it to the curd-egg mass along with sour cream. Beat quickly with a mixer. Salt and pepper a little. Pour into the mold with the cooled pie base.
Step 6
Wash the pears, cut into 4 parts and remove the cores with seeds. Cut fruit into small pieces. Distribute them throughout the egg-curd mass, sinking into it.
Step 7
Heat the oven to 190°C. Bake the pear and cottage cheese pie for 30-40 minutes. The filling in the middle should become elastic. Turn off the oven. Leave the cake inside for 10-15 minutes.
Step 8
Take the pear and cottage cheese pie out of the oven. Let it cool completely. To make the sauce, whisk mustard with vinegar, olive oil, salt and pepper to taste. Drizzle the mixture over the top of the pie and serve.
