Baked potatoes with vegetables

Description

These are very tasty potatoes! It's all about the dressing: spices, garlic, lemon juice and olive oil. During and after baking, there will be breathtaking smells in the kitchen. This dish is suitable for a romantic dinner, and for meeting with friends and for a picnic. I recommend! You will definitely like it!

Cooking

Step 1

Wash the potatoes, cut into large pieces and boil in salted water until half cooked. Drain the water.

Step 2

Cut eggplant and zucchini into rings, pepper into strips. In a frying pan in olive oil (1 tablespoon), fry vegetables for 5 minutes.

Step 3

In a deep bowl, mix spices for dressing: finely chopped garlic, cumin, coriander, curry with lemon juice and olive oil. Mix dressing with eggplant and zucchini.

Step 4

Grease a baking dish with oil, put potatoes, vegetables with dressing on top. Mix and smooth everything. Cover with foil and put in the oven at 180 degrees for 30 minutes.

Step 5

Remove the foil after 30 minutes and bake for another 20 minutes. And you can enjoy!

eggplant 1-2 pcs.
zucchini 1 pc.
sweet pepper 1 pc.
garlic 5 pcs.
lemon juice 2 tbsp. l.
olive oil 4 tbsp. l.
spices (cumin, curry, coriander) pinch
