1. Wash the fish, cut off the heads, gut, put on paper napkins and dry thoroughly. Cut the onion into half rings, lemon into thin circles. Heat half the oil in a saucepan. Fry the fish in small portions for 4 minutes. from each side. 2. Put lemon slices on the bottom of the pan, then onion and fish. Top with bay leaves and black pepper. 3. Dilute vinegar with water, mix with vegetable oil and salt to taste. Bring to a boil and pour over the fish. Cover with a lid and leave to cool. Serve fish cold. By the way Any fresh small fish – herring, capelin, sprat – is suitable for making homemade sprats. Very small fish can not be gutted.
