How to cook Petit fours

Step 1

Grind the peeled almonds into powder. Sift through a sieve, helping with your hand, onto a sheet of paper along with powdered sugar and flour. Set aside.

Step 2

Beat the whites with a whisk in a dense foam. Continuing to beat, add 1/3 of the sugar, then another 1/3 and finally the remaining sugar. With a spatula, collect the entire resulting mass to the center of the bowl. Also, in three doses, pour a mixture of flour, powdered sugar and almonds into whipped proteins. After the introduction of each portion, the dough should be mixed with light movements from the center of the bowl to the edges. Thanks to the gradual introduction of flour, the protein does not fall, but becomes denser.

Step 3

Preheat the oven to 180ºС. Transfer the dough to a pastry bag fitted with a wide nozzle and pipe onto a baking sheet with rings, circles and sticks.

Step 4

Sprinkle first with chopped almonds, then with powdered sugar. Put in the oven and bake for 12 minutes.

Step 5

Cool the finished petit fours. Lubricate part of the petit fours on one side with chocolate cream or melted chocolate, put two chocolate cookies inside, press lightly and let the chocolate harden.

Step 6

The second part of petit fours can be smeared with fruit or berry jam and two cookies can be fastened in the same way.

Step 7

On the remaining petit fours, make a mesh of melted chocolate.
