Step 1

Cut one apple into 6 circles, cut the other two into cubes. Wrap medallions with slices of lard or bacon, fasten with a thread, sprinkle generously with crushed spices. In a skillet, melt 1 tbsp. l. butter, fry the tournedos for 3 minutes. on each side, at the end of cooking, salt to taste. Remove from heat, place the tournedo on a serving platter, remove the string, and keep warm until serving. Melt 1 more tbsp. l. oil, add apples, fry for 2-3 minutes. Remove the apple mugs and set aside, add the chopped onion to the apple cubes remaining in the pan, fry it until transparent. Then pour in the wine, broth, evaporate, 3-4 minutes, and puree in a blender. Add the remaining oil to the puree, season with salt and pepper. Put hot tournedos on apple mugs, serve with applesauce.
