Marinated pork with grilled vegetables

In this recipe, you can use any seasonal vegetables: tomatoes, zucchini, squash, eggplant, parsnips.
How to cook Marinated pork with grilled vegetables
Step 1
Peel the ginger and garlic, finely chop. Combine soy sauce, ginger, garlic, mustard and red pepper sauce in a bowl.
Step 2
Wash the pork, put in a deep bowl and pour half of the resulting marinade. Marinate meat for at least 2 hours, turning occasionally.
Step 3
Wash tomatoes and zucchini and pat dry. Peel the onion. Cut all vegetables into circles about 0.5 cm thick.
Step 4
Put the vegetables in a bowl, pour the remaining marinade, mix thoroughly.
Step 5
Turn the oven on to the "grill" mode. Place the pork on a wire rack, put it in the oven, and place a baking sheet with high sides under the wire rack. Bake meat for 20-25 minutes.
Step 6
From time to time, the pork should be turned over and watered with marinade. Remove meat from oven, keep warm until serving.
Step 7
Put vegetables on the grill, pour over the marinade. Cook under the grill 2 min. Turn over, baste again with marinade and cook for another 2 minutes. Transfer meat with vegetables to a dish and serve.
