On this day, an indulgence is made for the Orthodox, and they can eat fish. Blagoveshchenskaya kulebyaka - fish, baked from lean dough. But at the same time - festive and elegant. For the filling, a screech, any fish, salted mushrooms, even lightly salted caviar are suitable. The kulebyaki are layered with pancakes, a layer of rice or loose buckwheat porridge is placed at the base.

Step 1

For dough from the sifted half of the flour, 2.5 cups of warm (38-40 ° C) water and yeast, knead the dough without lumps, cover with a towel. Let the dough rise in a warm, draft-free place, 30-60 minutes. Then add oil, salt, sifted remaining flour and knead.

Step 2

Knead the dough until it lags behind your hands, dust it with flour if it is not dense enough. Then put the dough in a clean bowl, cover with a towel and leave to rise in a warm place without drafts for 3-4 hours. During this time, the dough must be kneaded twice.

Step 3

Rinse the rice thoroughly so that clear water flows from it, put it on a sieve, shake off excess water and transfer to a saucepan. Pour 1.5 cups of boiling water, salt, close the lid, bring to a boil and cook over low heat for 15 minutes. Wrap in a blanket for another 15 minutes, then open, stir and cool.

Step 4

For pancakes, mix flour, salt, 1/2–1 cup warm water, and butter into a batter. Bake thin pancakes, greasing the pan with oil.

Step 5

Chop the fish fillet with a knife into minced meat and fry over medium heat in 2 tbsp. l. oils, 3-4 min. Remove from heat, salt and pepper to taste.

Step 6

Rinse salted mushrooms a little in cold water, squeeze and chop. Cut the onion into thin half rings. Fry the mushrooms and onions in the remaining oil over medium heat until the onions are golden, 10 minutes.

Step 7

Set aside some dough for decoration. Roll out the main piece of dough on a towel into a layer 1 cm thick. Spread the fish filling, then - in one layer - pancakes, then the mushroom filling, pancakes again, on the very top - a layer of boiled rice. Pinch the pastry over the filling and carefully, using a towel, invert onto a baking sheet with the pinch down.

Step 8

Decorate the kulebyaka by fashioning decorations from the reserved dough, make several small holes on the surface for steam to escape and grease with strong tea. Bake in an oven preheated to 180 ° C for 30-50 minutes.
