Easy summer vegetable soup
Cooking a light summer vegetable soup of vegetables and tomato puree. Adjust the amount of water to your liking, I made a thick soup. Also spicy to your taste, my vegetable tomato soup turned out to be moderately spicy. What else is good about this soup is that it can be eaten in hot weather and cold, it is delicious in any form.
How to cook Easy summer vegetable soup
Step 1
Onion and carrot cut into small cubes. Put in a pan with vegetable oil and fry for 3-4 minutes. We also cut the zucchini into small cubes, send them to the pan with vegetables and fry together for another 3 minutes.
Step 2
Cut sweet and hot peppers into cubes, send to vegetables and fry for another 2 minutes. Mix vegetables well. Add diced tomatoes. Next up is tomato puree. Season to taste and add Provence herbs. Add green peas, pour in water, bring to a boil and cook for 15 minutes.
Step 3
Remove the finished vegetable tomato soup from the stove and serve. Enjoy your meal!
