How to cook Wild boar ham with honey
Step 1
To prepare the marinade, finely chop the onion and carrot, mix with the rest of the marinade ingredients.
Step 2
Place the ham in a deep bowl, pour over the marinade and leave in a cool place for 36 hours, turning occasionally.
Step 3
Then remove the ham, dry it on a paper towel, rub with salt. Preheat the oven to 180ºС, put the ham on a baking sheet and place in the oven for 2 hours.

Pour sugar into a saucepan, add honey and orange juice. Heat over low heat until the sugar is completely dissolved.
Step 5
Remove the ham from the oven, make cuts on top of it with a knife in the form of a lattice. Spread with honey syrup and place back in the oven, increasing the temperature to 230ºС. Bake an additional 30 minutes, every 5 minutes. smearing the ham with syrup.
Step 6
For 10 min. until cooked, add crushed juniper berries and peppercorns, chopped bay leaves to the saucepan with syrup. Continue greasing the ham.
Step 7
Remove the cooked meat from the oven, let it brew for 10 minutes. Cut into portions and serve.
