Creamy blackcurrant ice cream

This time I will share with you a recipe for ice cream that is prepared without eggs. I was surprised at how much I liked this pure milky taste, and when combined with the sourness of blackcurrant, it makes a great combination! Highly recommend, especially in the season of fresh blackcurrant

Step 1

This amount of ingredients is calculated for an ice cream maker with a bowl of 500 ml and the yield of finished ice cream is about 1 kg. This ice cream is prepared in two stages - first blackcurrant sorbet is made, then creamy ice cream, both types are mixed and the final version is obtained. You need to prepare an ice cream maker in advance (freeze the bowl according to the instructions) and containers for freezing the finished ice cream.

Step 2

Cooking blackcurrant sorbet (soft ice cream). My blackcurrant, sort out, pour boiling water for 1 minute, then drain the water.

Step 3

We shift the berries into a blender bowl and grind into a puree. We grind the puree through a sieve to get rid of the seeds. Throw away the bones.

Step 4

Put sugar, water and honey into a saucepan, bring to a boil and until the sugar is completely dissolved. Mix the resulting syrup with berry puree. Cool the mixture in the refrigerator.

Step 5

We make sorbet according to the instructions for your ice cream maker. I transfer the cold mixture to a working ice cream maker - after 30 minutes. the mixture will thicken strongly - soft ice cream is ready. Transfer it to a container and place it in the freezer.

Step 6

The ice cream bowl needs to be frozen again. Cooking ice cream. We transfer milk (250 g), sugar and vanilla to a saucepan, bring to a boil. In the remaining 50 g of milk, dilute the starch.

Step 7

We brew the hot milk mixture with a starch mixture, cook over low heat with constant stirring with a whisk until milk jelly is obtained. We cool the resulting jelly well in the refrigerator.

Step 8

We mix cream with chilled jelly and prepare creamy ice cream from the resulting mixture in an ice cream maker.

Step 9

We combine both types of soft ice cream (creamy and blackcurrant) in a large bowl, mix lightly and transfer to containers for final freezing in the freezer. Ready!
