Pork with fennel and garlic

Meat baked with onions is a rather familiar combination. We took fennel instead of onions and were extremely pleased with the result of our experiment. The dish turned out fragrant and spicy.

Ingredients

  • a pinch of cumin
  • sea salt
  • 10 black peppercorns
  • 30 g butter
  • 1 kg pork (tenderloin or sirloin without bone)
  • 6 garlic cloves
  • 1 fennel
  • boiled rice for serving

Cooking

Step 1

Mix a generous pinch of cumin, a handful of sea salt and 10 crushed peppercorns with peas.

Step 2

Roll the pork into a roll and tie with a thread in several places. Roll in a mixture of pepper, salt and cumin.

Step 3

In a heavy skillet (which can then be placed in the oven), melt the butter and fry the pork on both sides until golden brown.

Step 4

Add garlic, thinly sliced fennel and bay leaves. Cover and bake the pork for about 1.5 hours in an oven preheated to 180ºС.

Step 5

Allow pork to rest for about 20 minutes before cutting into portions. Can be served with boiled rice.
