Eggplant caviar simple

This eggplant caviar is easy to prepare, but very tasty. In addition, it is also useful, because the vegetables for this dish are subjected to minimal heat treatment, all the more so they are not fried. We bake eggplant for 15 minutes, and generally add the rest of the vegetables fresh. In general, supporters of proper nutrition will definitely be delighted. And if this version of eggplant caviar seems fresh to someone, adjust its taste by adding the amount of salt, pepper or other spices you need to taste.

  • eggplant - 3 pcs.
  • vegetable oil - 4 tbsp. l.
  • tomatoes - 3 pcs.
  • large red onion - 1 pc.
  • dill - 2 sprigs
  • parsley - 2 sprigs
  • freshly ground black pepper - to taste
  • salt - to taste

Cooking

Step 1

Prepare the ingredients for making a simple eggplant caviar. Heat the oven to 180°C. Wash the eggplant and dry well. Lubricate 2 tbsp. l. vegetable oil.

Step 2

Place the eggplant on a baking sheet and bake for about 15 minutes (the skin on the fruit should burst). Let cool slightly, then scoop out the pulp with a spoon. Put it in a bowl.

Step 3

Tomatoes for eggplant caviar cut crosswise, then put in a colander and pour over several times with boiling water, then cold. Peel the fruit from the skin, finely chop the flesh.

Step 4

Peel the onion, finely chop and pour over boiling water. Add to bowl with eggplant pulp along with tomatoes. Mash with a masher or chop with an immersion blender.

Step 5

Add the remaining oil, salt and pepper to taste. Mix thoroughly. Remove to refrigerator until serving. Cut the green leaves and decorate the eggplant caviar.
