Prepare minced meat: put vermicelli and mushrooms in hot water for 10 minutes, put in a colander and chop coarsely. Grate the carrots, chop the green onion. Mix the yolk with minced pork, put carrots, vermicelli, mushrooms and green onions there. Add salt, sugar and pepper. Cut rice paper into squares. Wrap in them (preferably in two layers) a tablespoon of minced meat, making rolls closed on all sides. Seal the edges with egg white. Pour oil into a wok, heat to high, and fry the spring rolls, flipping, 2 minutes per side. Lay out on a paper towel.

50 g rice vermicelli
