How to cook Roast mediterranean style
Step 1
Wash the meat, pat dry and cut into large pieces. Roll each piece in flour.

Heat the olive oil in a frying pan, put the beef and fry it over high heat on all sides until golden brown, 5-6 minutes, then transfer to the pan. It is better to fry the meat in small portions.

Peel the onion, chop coarsely. Pour boiling water over tomatoes, peel and seeds, cut into slices. Wash thyme, dry and pick. In the pan in which the meat was fried, fry the onion, 2 minutes. Add tomatoes, thyme and bay leaf, pour in wine. Boil.
Step 4
Pour the sauce with vegetables into a saucepan with meat, cover and simmer over low heat for 1 hour.
Step 5
Peel potatoes, chop coarsely. Wash the sweet pepper, cut in half, remove the core and cut into thick strips. Add pepper to the meat, mix, then add the potatoes. Cook 10 min.
Step 6
Wash the eggplant, cut into large pieces and add to the pan. Cook another 15 min. Season to taste. Sprinkle with chopped parsley before serving. BTW: Thyme, one of the species of which is known in Russia as thyme, has a strong pleasant smell and a bitter-spicy, slightly burning taste. It is widely used both in European and various oriental cuisines for cooking meat, fish and vegetable dishes. It is also used in pickling cucumbers and mushrooms.
