Piaget
Piagju are small, lean cutlets made from lentils or peas. This popular Middle Eastern dish is reminiscent of the famous falafel.
Ingredients
Servings 6 servings- 250g yellow split peas or red lentils
- 0.5 tsp turmeric
- bulb large
- 0.5 tsp ground black pepper
- salt
- 0.5 cup chopped cilantro
- 0.5 cup flour
- vegetable oil - for frying
- 3 cm piece of fresh ginger
- cayenne pepper
- 2 Art. l. decoys
- garlic - 5 cloves
- 0.5 tsp ground cumin
- baking powder

Step 1
Soak peas or lentils overnight, then drain in a colander. Save some of the water in which they were soaked. Peel the onion and chop very finely. Peel the garlic and ginger, chop, place in a blender and chop. Add peas or lentils, 1 tbsp. l. reserved water and cilantro. Grind to a puree. Add cumin, turmeric, cayenne and black pepper, salt, flour, baking powder and semolina, mix. Add the onion to the mixture and mix again. Heat oil for frying in a deep frying pan. With the help of two tablespoons, form small patties from the dough and dip one at a time into the oil, frying until golden brown on both sides. Place the finished piaggio on a paper towel to drain excess fat. Serve hot or warm with lemon slices.
