Galette with vegetables

This biscuit is from the "lick your fingers" or "swallow your tongue" section. Well, very tasty, the perfect combination of vegetables and spices.

Ingredients

  • whole grain flour 180 g
  • salt 1 pinch
  • hot water 80 ml
  • olive oil 30+30 ml
  • eggplant 2 pcs.
  • tomato 3-4 pcs.
  • garlic 2 pcs.
  • basil 1 bunch

Cooking

Step 1

In a deep bowl, mix all the ingredients for the dough (whole wheat flour, salt, hot water and 30 ml of olive oil).

Step 2

Roll out the dough thinly, it is better to do this on baking paper.

Step 3

Cut eggplant and tomatoes into rings. Lightly fry the eggplants in a frying pan in olive oil (5 minutes), cool.

Step 4

Lay out the vegetables nicely: alternating eggplant and tomato, leaving an empty place for the fold on the edge.

Step 5

Form a biscuit by pinching the edges of the dough together. Transfer the biscuit with baking paper to a baking sheet.

Step 6

Bake at 180 degrees for 30-35 minutes.
