Cucumber and avocado gazpacho

In summer, we most often eat cold soups (okroshka, cold drinks, gazpacho, etc.). I suggest trying green gazpacho, which consists of green vegetables and herbs.

Ingredients

  • sweet pepper (green) 1 pc.
  • cucumber 2 pcs.
  • avocado 1 pc.
  • onions with green feathers 2 pcs.
  • cilantro greens 1 bunch
  • garlic 1 pc.
  • parsley 1 bunch
  • mint 1 pc.
  • olive oil 3 tbsp. l.
  • balsamic vinegar 2 tbsp. l.
  • salt 1 pinch
  • sugar 1 tsp. l.
  • chili 1 g
  • ice 5 pcs.

Cooking

Step 1

Bake sweet peppers in the oven for 30 minutes. Remove skins and seeds, refrigerate. Peel the skin from the cucumbers, if the seeds are hard, then clean them. Cut all vegetables and herbs into large pieces.

Step 2

Grind vegetables in a blender. Add salt, sugar, balsamic vinegar, olive oil to taste, add pieces of ice and beat with a blender again. Serve to the table!
