Caramelized pancakes baked with peaches
Ingredients
Servings 4- 200 ml dry red wine

- 0.5 vanilla pod
- 8 peaches
- 70 g sugar
- 100 ml redcurrant liqueur
- vegetable oil - 2 tbsp. l.

Sift flour with a pinch of salt into a bowl, make a hill with a recess in the middle. Crack the eggs into the well and, gradually adding milk, prepare the batter. Melt 25 g of butter, pour into the dough, mix. Lightly grease a non-stick frying pan with vegetable oil, fry the pancakes. Wash the peaches, peel and remove the pits. Cut the pulp into slices. Heat 25 g of butter in a deep frying pan, brown the peaches Sprinkle with 25 g of sugar, pour in the liqueur and wine. Cut the vanilla in half lengthwise, scrape out the contents and add to the pan with the peaches. Cook over low heat for 20 minutes. Grease a baking sheet with the remaining vegetable oil. Put candied peaches on each half of the pancake, cover with the other half of the pancake. Put on a baking sheet, sprinkle with the remaining sugar and pieces of butter. Caramelize the pancakes under the grill or hold for 3-4 minutes. in an oven preheated to 220ºС. Remove from oven, cool slightly and serve immediately.
