How to cook Tiramisu with Marsaloy
Step 1
Brew strong coffee and leave to cool.
Step 2
Whip cream with 1 tbsp. a spoonful of sugar into a strong foam.
Step 3
Beat the yolks with the remaining sugar until white in a water bath.
Step 4
Remove from the water bath and gradually add the mascarpone, cream, while continuing to beat at the lowest speed of the mixer.
Step 5
Add wine to coffee. Quickly dip each Savoyardi stick in coffee and lay out the bottom of the mold with a biscuit.
Step 6
Pour half of the cream on the cookies, smooth. Lay the second layer of cookies, put the remaining cream on top, smooth.
Step 7
Sprinkle thickly with cocoa. Place in refrigerator for about 6 hours.
