Roasted eggplant caviar

Eggplant caviar almost always contains the same ingredients. There is a lot of spicy greenery in this caviar: green basil, cilantro, and parsley are here. The appetizer is fragrant and slightly sour thanks to lemon juice.
How to cook Roasted eggplant caviar
Step 1
Wash the eggplants and bell peppers, prick with a fork and bake in the oven until tender. We put the sweet pepper in a bag so that it "sweats", so it will be easier to peel it from the skin.
Step 2
Peel the eggplants and sweet peppers from the skin and cut the pulp. Chop sweet onion, chili and garlic very finely. Wash the cilantro, basil and parsley and shake off the drops and chop them too.
Step 3
Salt to taste, add a pinch of sugar, lemon juice, season with olive oil.
