Newdy with spinach
Description
"Nudi" in the Florentine dialect means "naked" (in fact - without flour), similar to dumplings or lazy dumplings, only much more tender.
Cooking
Step 1
Blanch spinach in boiling salted water until soft. Squeeze.
Step 2
Finely chop spinach, mix with ricotta and parmesan. Add beaten egg, salt, pepper and nutmeg. Form into small balls and roll in flour.
Step 3
Throw Newdies into boiling water and cook until they float to the surface. Remove with a slotted spoon, place on a plate and drizzle with olive oil.
