Description

Step 1
For crackers, finely chop chilled butter and cheese together with flour. Add cream and yolks, mix thoroughly and put in the refrigerator for 20 minutes.
Step 2
Remove, knead again, roll into a sausage with a diameter of 5-6 cm, wrap in plastic wrap and put for another 20 minutes. into the freezer.
Step 3
Cut with a hot knife into slices 0.5 cm thick, put on a greased baking sheet and bake for 10 minutes. in the oven at 200ºС.
Step 4
For the sauce, combine the egg yolks, cream, salt, and cayenne in a heavy bottomed saucepan. Cook over low heat for 3-4 minutes, stirring constantly. Add cheese and butter, cook, stirring, until thickened. Pour in cognac. Refrigerate and serve with crackers.
