Fluffy pancakes with holes

Despite the fact that lush pancakes with “holes” are made from unleavened dough, they turn out to be very similar to classic yeast ones. The thing is that the composition has a “secret ingredient”: sweet sparkling water.” It is she who provides the dough with a special splendor, which in the process of baking pancakes is transformed into “holes” so dear to every Russian heart. Looks very appetizing! And also lush pancakes with “holes” are very satisfying, so you should not overload them with fatty sour cream or condensed milk: light fruit and berry syrups are enough.

Ingredients

Servings 4-6
  • 260–270 g flour
  • 200 ml milk
  • 1 large egg
  • 300 ml carbonated lemonade (Sprite, 7Up)
  • 2 tbsp. l. vegetable oil
  • 2 Art. l. Sahara
  • 2 tsp baking powder
  • 0.3 tsp soda
  • 0.3 h. l. year
  • vegetable oil for frying
  • fruit syrup for serving

Cooking

Step 1

Prepare fluffy pancake dough. Sift the flour into a bowl through a fine sieve. Add baking powder, salt and soda. Mix thoroughly with a whisk or just a fork.

Step 2

In another bowl, beat the egg and sugar with a whisk or mixer until fluffy. Whisking continuously, add milk. You should get a mass of a homogeneous consistency.

Step 3

Pour about half of the lemonade into the egg and milk mass and mix thoroughly. Pour the liquid mixture into the flour with baking powder and salt and mix with a whisk.

Step 4

Top up with the remaining lemonade and vegetable oil. Stir until smooth. Cover the resulting pancake dough with a towel and leave at room temperature for 20 minutes.

Step 5

Preheat the pan, grease it with vegetable or melted butter and bake thin pancakes over medium heat, brushing the pan a little with a brush before each. Put the finished pancakes in a bowl or pan under the lid. Serve hot with syrup.
