Zucchini with tomatoes and garlic for the winter

Zucchini and tomato appetizer is one of the best vegetable combinations. They complement and saturate each other well. This dish will be tasty and rich both cold and hot. A universal appetizer that you can serve as a separate dish or offer it as a vegetable stew for hot dishes. Sweet and bright appetizer will become popular at your table, especially during winter.
How to cook Zucchini with tomatoes and garlic for the winter
Step 1

Chop the garlic with a knife or use a garlic press, cut the chili pepper into thin slices. You can remove the seeds from the pepper if you don’t like their taste. Place the garlic and pepper in a deep saucepan.
Step 2

Cut the zucchini into cubes, if necessary remove the seeds and too tough skin. Cut the tomatoes and place them in a saucepan with the zucchini. Add vegetable oil and simmer over low heat for 20-30 minutes.
Step 3

Add salt, spices and herbs to taste to the vegetables, mix well and leave to simmer for another 10-15 minutes under the lid.
Step 4

Add vinegar to the snack, mix thoroughly and transfer the finished snack into jars. Close the jars with iron lids, wrap them up and leave until completely cooled.
