Take out the rib bones. 2. Wash the dill, dry and finely chop. Mix with salt and sugar. 3. Put the mixture in an even layer on one half of the fillet, cover with the second half, press down. Wrap in cling film and leave for a day at room temperature, then place in the refrigerator.
