Kulich from Oksana Lebed

This is my godmother's Easter recipe, and her Easter cakes were famous all over the area. Aunt retired early and worked as a dishwasher in a cafe on the outskirts, but for her culinary talent she was quickly lured to the city. And that's how I found out about it. On Easter, a friend treated me: “Try Easter cake, you have never eaten such a thing!” I exclaimed: “It's Nadina kulich! Where did you get it? So it turned out that Nadia works in a city cafe. Now I myself bake it every year, even though it takes almost a day. The godmother said that the dough must be loved, then it will reciprocate. Now every year I look forward to making my cake again.

How to cook Kulich from Oksana Lebed

Step 1

Prepare the steam. In warm milk, add 2-3 tbsp. spoons of sugar, mashed yeast, 150 g flour, a little salt. Close and leave for 3.5 hours.

Step 2

While the dough rises, beat the muffin: beat the remaining sugar with eggs, add softened butter, sour cream, mayonnaise. Then you can proceed in two different ways. Method 1: add 400 g of flour to the fermented dough to make dough, like pancakes. Let this dough come up and only then add the muffin. In this case, a light airy dough is obtained. Method 2: pour the muffin into the dough immediately and add 250 g of flour. It will take longer to wait for the dough to rise than in the first case, the dough will be fat-curd, very tasty.

Step 3

When the dough has risen, add flour and vegetable oil. The dough will be like thick cream. Knead the dough with a spoon and leave for another rise.

Step 4

Stir in candied fruits or raisins, a little freshly ground cardamom, a little nutmeg, and vanilla into the fermented dough. Divide the dough into paper forms, filling them no more than half the form. Once the dough has risen in the form, you can bake.

Step 5

If possible, bake Easter cakes in this mode: at 170 C with lower heat until a crust forms on the surface, then turn on the blower and continue baking at 180 C.

Step 6

For the glaze, beat the protein with powdered sugar, add a few drops of lemon juice. Cover hot cakes with icing.
