Apple balls in caramel

How to cook Apple balls in caramel
Step 1
Using a special spoon (noisette), cut small balls out of strong, crispy apples. Make sure that there is no skin left on the surface of the balls. Prick the balls onto the sticks.
Step 2
Combine sugar and lemon juice in a saucepan, place over medium heat and bring to a boil. Cook over low heat, without stirring, until the sugar is a deep amber color, about 5 minutes. Remove saucepan from heat and add cream, stir. Cool down the caramel.
Step 3
Dip the balls in the caramel, then dip the bottom of the ball into the colored sprinkles and leave to dry completely (you can put the balls on a piece of parchment oiled).
