Step 1

Leek cut into thin strips. Finely chop the salmon fillet with a knife. Put the leek and salmon into the oil heated in a frying pan, add the capers and finely chopped zest and fry for 2-3 minutes. Pour in the wine. Cook until the wine has completely evaporated. Place mince in a bowl, let cool. Add mayonnaise, salt and white pepper. Make a three-layer sandwich, garnish with basil.
