Japanese national cuisine is not only sushi, but also misoshiru, also known as miso soup. Dashi broth and special miso paste are traditionally used for its preparation. The Japanese believe that the ingredients are not important in this dish, but the color, texture and, of course, flavor combinations. Therefore, when adding products with a bright aroma, neutral tofu is always added to them.

Add this mixture to the saucepan. Turn off the heat. Place tofu, seaweed, onion in a bowl. Pour in the broth from the saucepan.

Yes! If you don't have dashi, you can use vegetable broth for a vegetarian version or chicken broth for a different flavor. Alternatively, soak a piece of kombu (dried kelp) in warm water for 30 minutes as a simple dashi replacement.
Most traditional miso is gluten-free, but always check labels—some varieties may contain barley. Look for miso labeled '100% soy' or 'gluten-free' to be safe. Chickpea miso is another great alternative.
It's best enjoyed fresh, but you can store it in the fridge for up to 2 days. Note: the tofu may soften over time. Reheat gently (don’t boil) to preserve flavor.
