Lamb leg with kiwi
In case you didn't already know, kiwi is the world's best protein leavening agent. The marinade prepared on the basis of this fruit makes the meat tender and fragrant.
How to cook Lamb leg with kiwi
Step 1
1. This dish is prepared the day before. With a sharp knife, make a longitudinal incision along the entire bone on the leg of lamb. Spread the meat with your hands and, carefully cutting from all sides, separate it from the bone. (Do not throw away the bone, you can make a rich lamb broth with it.) Spread the lamb on a cutting board so that the inside of the meat adjacent to the bone is on top, and cut a piece in all thick places so that it becomes approximately the same thickness. This is done so that the lamb marinates better. 2. Peel the kiwi and cut into small pieces (leave one chopped fruit for stuffing). Wash parsley and dill, chop. Peel the onion, cut into rings. Peel and chop the garlic. Mix kiwi, herbs and garlic, add soy sauce, mayonnaise, mustard, salt and pepper, mix thoroughly. 3. Apply the resulting marinade in a thick layer on the inside of the piece of meat and again give the meat the shape of a leg. First fasten the edges of the piece with wooden toothpicks, and then tie it with twine (in no case synthetic). 4. Stuff the whole leg with pieces of kiwi and garlic. To do this, use a sharp thin knife to make deep punctures in the meat, where to push pieces of kiwi and garlic along the blade. 5. Coat the lamb leg with the remaining marinade on the outside, put it in a culinary bag for baking and put it in the refrigerator for 10-12 hours. Remove the meat from the refrigerator and bake in an oven preheated to 220 ° C for 1.5-2 hours, in depending on the weight of the leg. 6. Wash cauliflower and broccoli, disassemble into inflorescences. Wash peppers, remove stems and seeds, cut into large pieces. Boil vegetables for 10 minutes. Throw them in a colander, and then quickly fry in vegetable oil over high heat. BTW: One kiwi fruit contains the daily requirement of vitamin C for an adult. In addition, kiwi perfectly complements not only fruit, but also vegetable salads.
