Herring without a fur coat

Step 1
Take warm mashed potatoes and put it in a deep plate in a slide.
Step 2
Pour demi-glace sauce over the side of the plate, put the herring fillet on top.
Step 3
Gently stick a piece of apple into the center of the composition, lay out the beets, pickled vegetables and red onions. Decorate with cilantro.

sweet apple - 10 g
egg yolk - 1 pc.
pickled cauliflower or other vegetables - 20 g
herring - 70 g
mashed potatoes - 120 g
sauce Demiglas - 50 g
beets - 30 g
fresh cilantro - 30 g
salt and pepper to taste
