Guacamole Stuffed Mushrooms

Guacamole sauce is a traditional Mexican sauce made from avocado with tomatoes, herbs and spices. Guacamole can be either a pureed sauce or a small-diced "salad". In this recipe, processed cheese is added to the guacamole. The resulting filling is stuffed into baked mushroom caps. The mushroom stems can be finely chopped, fried and added to the filling. The snack is light and piquant.
