Description

For some reason, we are sure that this cocktail will be your signature drink for this summer. It surprisingly combines the taste of a classic mojito and the delicate sweetness of an apricot.

Cooking

Step 1

Prepare the apricot puree. Remove the pit from the apricots and chop the flesh. Put the apricots in a small saucepan, add sugar and a pinch of salt, and pour in 1.5 cups of water. Put on fire, bring to a boil and cook for 5 minutes.

Step 2

Pour the apricots, along with the liquid, into the bowl of a blender and blend into a smooth puree. Cool down. You will have about 2 cups of puree, enough for 8 servings of a cocktail.

Step 3

Cut the lime into wedges and place in a tall glass, add the mint leaves and pound lightly with the pestle. Add 1/4 cup apricot puree, pour in rum and sprite and stir. Fill glass with ice and serve immediately.

1/4 cup apricot puree
6 fresh mint leaves
half a lime
50 ml white rum
50 ml sprite or mineral sparkling water
4 pitted apricots
1/2 cup sugar
a pinch of salt
