Salad of potatoes, beans and spicy pork sausage

Ingredients

Servings 4
  • 500 g boiled small potatoes
  • 4 hard boiled eggs
  • 230 g green beans
  • 200 g pork sausage, chorizo type
  • 1 clove of garlic
  • 2 tbsp. l. wine red vinegar
  • handful of parsley leaves
  • vegetable oil
  • salt

Cooking

Step 1

Boil the beans in boiling salted water for 2 minutes.

Step 2

Cut the sausage into long pieces and fry with finely chopped garlic in hot oil, stirring occasionally, for 1 minute. Add potatoes cut into 4 parts, shake the pan several times to mix the ingredients. Cook for 1-2 more minutes.

Step 3

Transfer the contents of the pan to a bowl. Add beans, vinegar, finely chopped parsley, salt. Stir. Divide among plates, top with peeled eggs, cut into 2-4 pieces, and serve immediately.
