Roast pork with vegetables

Ingredients

  • 700 g pork
  • 12 pcs. potatoes
  • 1 zucchini
  • 1 eggplant
  • 2 bell peppers
  • 2 onions
  • 4 garlic cloves
  • 1 st. l. red wine vinegar
  • 3 bay leaves
  • 2 Art. l. chopped parsley
  • 1 Art. l. paprika
  • salt
  • pepper
  • vegetable oil

Cooking

Step 1

Cut the pork into small pieces. Quickly fry over high heat until crusty, salt.

Step 2

Coarsely chop the onion and pepper. Eggplant and zucchini cubes. Fry onion with pepper, zucchini with eggplant.

Step 3

Put meat, vinegar, bay leaf, chopped garlic, parsley, paprika, pepper, salt, potatoes cut into large pieces in a saucepan, pour in water (or broth) so that it completely covers the food (I have 1 liter), simmer for 30 minutes. Add fried zucchini with eggplant, onion and pepper. Warm up 5 min.
