Roast pork salad

Step 1
Cut the pork into small pieces. Sun-dried tomatoes - stripes. If the cucumbers have a tough skin, peel it, cut the flesh into small cubes.
Step 2
Remove the pit and peel from the avocado. Cut the pulp into cubes, sprinkle with lemon juice. Chop green onions and cilantro.
Step 3
For dressing, mix mayonnaise, horseradish and mustard. Toss pork with dressing, add herbs, cucumbers and avocados. Season with salt and pepper and let steep 15 minutes. and serve.
Ingredients
400 g roast pork (ham or lean neck)
1 medium ripe avocado
2 medium pickled cucumbers
10 sun-dried tomato halves
1 small bunch greens (cilantro and green onion)
2–3 tbsp. l. mayonnaise
1 tsp prepared creamy horseradish
1 tsp spicy mustard
juice of half a lemon
salt, freshly ground black and red hot pepper
