Nettle soup with chicken

Nettle soup with chicken is a great solution for those who want to make a hearty meal more healthy. How to cook Nettle soup with chicken

Step 1

Prepare chicken meatballs. Cut the flesh from the bird carcass, leaving the wings and back intact, and pass through a meat grinder with a fine grate.

Step 2

Peel the garlic and potatoes. Pass one clove and half of the tuber through a meat grinder and combine with chopped chicken pulp (pour the remaining potatoes with cold water and leave until used). Add egg, salt and pepper to taste. Mix thoroughly.

Step 3

From the resulting minced meat, form small meatballs, periodically wetting your hands with water. Place on a tray, cover with cling film and refrigerate until use.

Step 4

Put the remaining chicken carcass in a saucepan, cover with cold water and bring to a boil. Remove the foam and salt to taste. Add halved unpeeled onion and carrots. Boil for 1.5 hours on low heat. Strain the broth.

Step 5

Wash nettles for soup, remove tough stems. Finely chop the rest of the greens. Peel the remaining onion and chop finely. Cut potatoes into small cubes.

Step 6

Heat the oil in a heavy bottomed saucepan and sauté the onion. Add potatoes and fry 5 minutes. Pour in half the broth, bring to a boil and simmer over low heat for 10 minutes. Put the nettle and cook for 7 minutes.

Step 7

In another container, bring the remaining broth to a boil and cook the chicken meatballs in it until tender. Combine contents of both pots and bring soup to a boil.
