How to cook Matcha green tea ice cream

Step 1

Beat the yolks with sugar until a white mass forms. Heat the milk without boiling and pour into the yolks in a thin stream.

Step 2

Add vanilla, cook in a water bath for 5 minutes, stirring constantly, add green tea and cook until thickened.

Step 3

Cool the resulting mixture to room temperature, strain through a fine sieve, add cream and freeze. You can freeze in an ice cream maker according to the standard scheme. Alternatively, place the mixture in a container and place in the freezer.

Step 4

Beat with a whisk every 30 minutes. until complete hardening. Serve with chopped pistachios (optional).
