Step 1
Sprinkle a sheet of foil with water, cover with cling film, press down. Thanks to the water, the film will adhere well to the foil.

Rinse raisins, pour warm boiled water. Roast the nuts in a hot dry frying pan, crush into large crumbs. Cut candied fruit into small pieces. Whip the cream with a mixer at high speed until a stable but soft foam, 3 minutes, refrigerate. Pour sugar into a saucepan, pour in 40 ml of water and, stirring constantly, bring to a boil, 5 minutes.
Step 4
Beat egg whites with a mixer. Continuing to beat at the slowest speed, pour in the hot sugar syrup in a thin stream. Increase the speed and beat until the whites are stable on the whisk.
Step 5
Add whipped cream to the egg whites, mix gently with a spatula. Then add candied fruits, raisins, nuts and zest. Mix again.
Step 6
Transfer the mass to the prepared form, smooth the surface. Cover with the free edges of the film with foil and place in the freezer for at least 1 hour.
