Step 1

Pour sugar into a saucepan, pour in 40 ml of water and, stirring constantly, bring to a boil, 5 minutes.

Beat egg whites with a mixer. Continuing to beat at the slowest speed, pour in the hot sugar syrup in a thin stream. Increase the speed and beat until the whites are stable on the whisk.

Step 5

Add whipped cream to the egg whites, mix gently with a spatula. Then add candied fruits, raisins, nuts and zest. Mix again.

Step 6

Transfer the mass to the prepared form, smooth the surface. Cover with the free edges of the film with foil and place in the freezer for at least 1 hour. Remove the frozen cassette from the mold, turn it over onto a dish, remove the foil and film.
