Bruschetta with pumpkin and turkey
Bruschetta with pumpkin and turkey is very tasty, healthy and easy, our spring-summer family snack that absolutely everyone who tries it will love! Bruschetta differs from well-known sandwiches in that not every bread is suitable for its preparation. In order for bruschetta to turn out really great, you need to use high-quality ciabatta and be sure to dry it in the oven or fry it in a frying pan until crispy.
Ingredients
Servings 6- pumpkin slice - 300 g
- turkey fillet - 300 g
- ciabatta - 1 pc.
- cheese - 150 g
- arugula - 150 g
- sweet red onion - 1 pc.
- pumpkin seeds - 1/2 tbsp.
- garlic - 1 pc.
- lemon juice - 1.5 tsp
- olive oil - 4 tbsp. l.
- balsamic vinegar - 5 tbsp. l.
- ground black pepper - 3 pinches
- curry - 2 pinches
- salt - 2 pinches
Cooking
Step 1
Turn on the oven and set to warm up to 180°C. At this time, we will clean the pumpkin from seeds and cut into slices 2 cm thick.
Step 2
We cover the baking sheet with foil, lay out the pumpkin slices, grease with olive oil using a silicone brush. Lay the peeled garlic cloves next to the pumpkin (the pumpkin will absorb the aroma of garlic during baking).
Step 3
Put the tray in the oven for 20-25 minutes. until the pumpkin is ready - it should become soft and easily pierced with a knife.
Step 4
Let's start cooking the turkey. We take our turkey fillet, rinse with cold water and dry with paper towels. Cut the fillet into small medallions.
Step 5
To marinate the fillet, use balsamic vinegar, curry, black pepper and salt.
Step 6
We mix the ingredients, immerse the medallions in the resulting marinade, let it soak a little, then place it on a heated home grill or grill pan for 2-3 minutes. until the turkey is done.
Step 7
Carefully remove our cooked medallions from the grill, let them cool slightly and cut into small cubes.
Step 8
Peel the red onion and cut into small cubes. Prepared arugula leaves (washed in cold water and dried with paper towels) are torn by hand into 2-3 parts.

Mix arugula with onions.
Step 10
In a small bowl, mix 2 tbsp. l. olive oil, 1.5 tsp. lemon juice, salt, pepper and mix thoroughly.
Step 11
We fill the salad of arugula and red onion with the resulting sauce, mix.

Preparing ciabatta. We cut our ciabatta into neat slices, grease with olive oil using a silicone brush.

We put the ciabatta in the oven for 5-7 minutes until cooked.
Step 14
We take prepared pumpkin seeds and divide in half. We will need one part in its entirety to decorate our dish, and the other in crushed form to sprinkle our bruschettas.

By this time, our pumpkin should have time to prepare. We take out the baking sheet with the pumpkin from the oven, let it cool a little and separate the pumpkin pulp from the peel, cut the pulp into small cubes, then rub with a fork until a homogeneous creamy state.
Step 16
We take out the baked ciabatta from the oven, let it cool a little and rub the garlic remaining after baking with pumpkin. We spread the pumpkin cream on the prepared slices of ciabatta.
Step 17
Add the rest of the ingredients. On top of the pumpkin cream, we place a little salad of arugula and red onion, then place the chopped turkey, sprinkle with cheese and chopped pumpkin seeds.
