Step 1
Turn on the oven to warm up at 170 gr. Line the bottom of a detachable form (18 cm) with a circle of parchment paper. Sift flour, baking powder, salt twice. Heat milk and butter to a boil. Beat the eggs for about a minute and gradually adding sugar, beat for 10 minutes until white and airy. It is very important! It turns out a light, lush, light mass. Now, in three stages, mix the flour into the egg mass, mixing gently with a spatula with movements from the bottom up. Heat the milk and butter again almost to a boil, that is, to a very hot state, when bubbles appear on the surface. No need to boil! And in two stages, pour hot milk with butter into the dough. After each infusion, mix from the bottom up with a spatula three times ....
Step 2
We spread the mass in the form, it turns out to be of medium density. Bake for 25-30 minutes at 170 gr .... I baked a biscuit for 40 minutes. Take out of the oven and turn the cake tin upside down onto a wire rack. The biscuit turned out to be quite high 6 cm.
Step 3
In order to get chocolate stripes on the biscuit, you need to put a part of the dough into the mold and sprinkle it with cocoa powder (through a strainer), then again the dough, cocoa and again the dough.
