How to cook Wine mousse
Step 1
In a large pot, heat water for a bain-marie. Whisk egg yolks, egg and icing sugar. Put the bowl in boiling water and gradually add the wine, continuing to whisk until the mousse is foamy. Remove the bowl from the water bath and stir the mousse until it cools down.
Step 2
Pour the wine mousse into 4 glasses. Grated lemon zest can be added to the wine foam. Serve cold with sweet biscuits.
