Stewed potatoes with vegetables
Stewed potatoes with onions, carrots and garlic in tomato sauce is a simple and very tasty vegetarian dish that can be either a standalone dish or a side dish. Cooking stewed potatoes with vegetables is very simple: peel all the vegetables, cut them and stew them in a small amount of water with spices. While the vegetables are cooking, you can cook something else or do your own thing.
How to cook Stewed potatoes with vegetables
Step 1

Cut the onion into large cubes. Chop the garlic.
Step 2

Cut the potatoes into 1 cm cubes.
Step 3

Also cut the carrots into small cubes.
Step 4

Place all ingredients in a saucepan, add 1 liter of cold water and place on the fire.
Step 5

Add chopped greens, tomato paste and bay leaf to the vegetables. Simmer the vegetables over low heat for about 20-25 minutes until the potatoes are done.
Step 6

Salt and pepper the prepared vegetables to taste.
Step 7

Serve the dish sprinkled with chopped herbs.
