Spinach with green peas

Here is a wonderful side dish for fish or meat or an independent vegetarian dish. It goes well with any pickled cheese or boiled cereals.

How to cook Spinach with green peas

Step 1

Boil green peas in boiling salted water for 5 minutes. Pour off 1/2 cup of the liquid in which it was boiled, and discard the peas in a colander, pour over with cold water.

Step 2

Set aside 1 cup of peas, put the rest in a blender bowl, pour in the broth, salt and pepper. Grind into puree.

Step 3

Peel the onion and garlic, cut the onion into cubes, chop the garlic. Heat the olive oil in a frying pan and add the onion and garlic, fry for 3 minutes, until soft. Add spinach and cook, stirring, 5 minutes, until leaves are wilted. Transfer to a plate.

Step 4

Pour some more olive oil into the pan and add the mashed peas and whole peas. While stirring, cook for 2 minutes. Then return the spinach to the pan and stir. Salt and pepper a little if necessary. Transfer to a platter and sprinkle with finely chopped green onions.
