Sandwich Pan-banya

Cookinero 25 January 2023

Pan banya is, in fact, the same as the Nicoise salad, but only served inside a round loaf of bread. The ingredients are the same: tuna, eggs, tomatoes, bell peppers, olives, anchovies, olive oil... The bread is well soaked with a mixture of olive oil and vinegar, which is why the sandwich is called "pan-bagna," i.e. "redeemed bread." The sandwich turns out to be very bright, rich, nutritious and at the same time light.
