Potatoes with pickled mushrooms

Potatoes with mushrooms is a popular dish in Russian and European cuisine. There are many recipes for preparing the dish, for example, potatoes with pickled mushrooms. The easiest way is to bake the products in the oven. The dish can be prepared from different mushrooms. The most affordable and all-season option is champignons. You can either buy a ready-made product or marinate the mushrooms yourself. The process is simple, but it will take from 5 to 8 hours.
How to cook Potatoes with pickled mushrooms
Step 1

Marinate the champignons. Pour water and vinegar into a saucepan, add a teaspoon of salt, bay leaf, peppercorns, sugar, coarsely chopped garlic and oil. Place the mushrooms in the saucepan with the marinade. Bring to a boil and cook for another 5 minutes from the moment it boils. Leave the champignons to cool, then move them to the refrigerator for 5-8 hours.
Step 2

Prepare the sauce. Mix sour cream with spices in a bowl - salt, ground allspice and dill. Leave the sauce to infuse for 3-5 minutes.
Step 3

Prepare the vegetables for baking. Heat a heat-resistant form in the oven for about 5 minutes and put butter in it, spreading it evenly over the surface. Then lay the vegetables in layers. Put the potatoes in the first layer, overlapping the pieces. Put the onion on top of it. Cut the marinated champignons into thin slices and put them on the onion. Spread the sauce over the surface of the mushrooms and sprinkle with grated cheese.
Step 4

Bake potatoes with marinated mushrooms. Bake vegetables in the oven at 200˚C for about 40-50 minutes. The cheese should melt and brown. Check the readiness of the dish by the potatoes, they need more time to bake than the other ingredients.
