Step 1

Make coffee. Pour freshly ground coffee into a Turk, add 1 tbsp. sugar, a little salt and cinnamon. Pour in water and put on low heat. When the foam starts to rise, set the Turk aside and let the foam settle. Repeat the procedure 3 times. Pour the remaining sugar into a ceramic or metal container and pour in the cognac. Following fire safety rules, set the mixture on fire. Prepare a cup in which you will serve the coffee. Pour in the cognac and coffee brewed in the Turk.
