How to cook Bagels with jam

Step 1

To begin with, in any way convenient for you, mix 250 g of flour with cold butter until medium-fine crumbs are obtained.

Step 2

Then add cottage cheese, lightly beaten egg with a fork, salt, sugar to this mixture of flour and butter, mix the remaining 50 g of flour with baking powder and gradually mix into the dough. Flour may not go away and not all, but it may still be needed. It depends on how wet or dry your cottage cheese will be, what size the egg is, and, of course, a lot also depends on the flour itself. Knead the dough quickly so that the oil it contains does not flow. The dough should stop sticking to your hands, become quite homogeneous, but at the same time remain quite tender and soft. We divide it into 2 parts, wrap it in a film and send it to the refrigerator for at least 1 hour.

Step 3

We roll out the dough thinly, constantly sprinkling flour on both sides so that it does not tear and does not stick to the surface, first divide it into 4 equal parts, and then divide each quarter into 6 parts.

Step 4

Be sure to roll out the dough thinly and do not divide the dough into more than 2 parts, because when rolling out we need to get a large circle, and we need to cut it into small segments, we should get narrow and long segments. It is from these that beautiful bagels will turn out.

Step 5

You need quite a bit of jam, otherwise it will be too sugary sweet, and it can leak out of the bagels, spread literally 1/4 tsp.

Step 6

Now it is important to twist the bagel correctly, first we twist it tightly, pressing the edge a little to seal the filling inside, as if we are forming a candy. When the jam ends, we twist the bagel very freely, not tight, so that it can rise a little during baking, so that it does not tear and that it bakes well inside.

Step 7

We spread the bagels on a baking sheet covered with parchment at a small distance from each other, given that they will grow a little during the baking process. It is also important to lay them "tail" down. Pressing the tip with the bagel itself so that it does not unwind during baking.

Step 8

We bake bagels at 200 degrees for 17-20 minutes.
